Most people read Update Available as the company wanting to change things you had finally learned. That is not usually what is happening.
Software is written by people, so it has mistakes in it. Some of those mistakes are holes a criminal can crawl through. An update is the patch over the hole.
The people who break into phones read the update notes too. Once a hole is announced, phones that waited become the easy targets.
The calm way to handle it: plug the phone in, connect to your home Wi-Fi, and let it update while you sleep. You wake up to a finished job.
